No-Bake Chocolate Cookies
This is by no means a food blog, but I love hearing about people’s go-to recipes, so thought I would share some tried and true family favourites. This is an incredibly simple cookie recipe that has been passed down through at least three generations in our family.
My Mom has been making these cookies for as long as I can remember. I’m one of four kids, so as you can imagine, our house was incredibly busy. Somehow my Mom managed to keep things running smoothly, and even made raising four kids look fun. She had a few tricks up her sleeve, like these cookies, which were a staple in our house, and still taste like “home” to me. Fast. Easy. Delicious. Everything a cookie should be.
Instructions
- Combine butter, cocoa, sugar and milk in a saucepan over medium heat.
- Stirring occasionally, bring to a boil.
- Boil for two minutes.
- Remove from heat, and, working quickly, stir in coconut, rolled oats and vanilla.
- Spoon immediately onto cookie sheets, and allow to cool.
